Easy Homemade Quiche Recipe (2022)

Serves: 6 adults


This super simple quiche recipe is a game changer that will elevate your next holiday brunch! It's as easy to make as scrambled eggs, and fancy enough to impress! Needless to say, this dish is also delicious! Nutritionally, the stars of this recipe are the eggs, onions and leafy green vegetables. Based on your food preferences, you can add more or different leafy greens and vegetables such as mushrooms, green peppers, green onions, zucchini or tomatoes!


Ingredients:


1 pie crust

2 tablespoons olive oil

2 tablespoons butter

1 small yellow onion, sliced

2 handfuls of chopped greens or vegetables of your choice

5 large pastured raised eggs

¾ cup heavy cream

¾ teaspoon salt

¼ teaspoon ground black pepper

½ cup shredded parmesan cheese

½ cup shredded cheddar cheese


Steps:


1. Carefully roll out the pie dough and place it into a 9-inch pie dish. Turn on the oven to 375 degrees.

2. Perforate the pie dough with a fork.

3. Place parchment paper on top of the pie dough and then add pie weights or uncooked rice or beans, so the pie crust doesn't puff up when par-baking.

4. Once the oven is pre-heated, place the weighted pie crust in the oven. Bake for 15 minutes.


5. Slice the onions and chop the greens or vegetables of your choice. I used a mixture of chard, kale and spinach. Set aside.




6. Heat the olive oil in a small pan on the stovetop over medium heat.




7. Sauté the onions until caramelized. This will take about 6-10 minutes.

8. Add the butter and the greens or vegetables of your choice to the sautéed onions. Season with a pinch of salt and pepper. Cook until wilted. Remove from the heat and set aside.

9. In a large mixing bowl, add the eggs, heavy cream, salt and pepper. Whisk together thoroughly. Set aside.




10. Remove the partially baked pie shell from the oven and place it on a baking sheet. Carefully remove the pie weights or dried rice or beans and the parchment paper. Turn the oven temperature down to 360 degrees.


11. Add half of the sautéed onions and greens or vegetables to the bottom of the empty pie shell.

12. Sprinkle 1/4 cup of the shredded parmesan cheese and 1/4 cup of the shredder cheddar cheese on the bottom of the pie shell.

13. Pour the egg mixture into the pie shell on top of the onions, greens or vegetables and shredded cheese.

14. Add the remainder of the sautéed onion, greens or vegetables and the shredded cheese on top of the egg mixture.

15. Bake in the oven for 30-35 minutes or until the egg mixture is firm.

16. Take the quiche out of the oven. Let it stand for 10 minutes before serving.
